Let the sample rest before checking again. If it remains unset, check that steam was maintained and continue steaming as needed.

Masa is difficult to spread

Compare your dough with the package formula. Adjust liquid gradually and test one husk before changing the whole batch.

Masa thickness varies

Use the tamale guide board template and compare the layer across one husk before moving on. Look for thick patches or gaps, and aim for a similar layer on the next husk. Change one part of your spreading technique at a time.

Filling leaks

Try a smaller portion or reduce excess liquid in the filling.

Husks crack

Check their flexibility and use an intact husk.

Results vary across the pot

Compare masa thickness and filling portions from husk to husk; the tamale guide board can help maintain a consistent masa layer. Also check the water level, maintain steam, and avoid packing so tightly that steam cannot circulate.

Tamales seem dense

Review hydration, mixing, and masa thickness separately. A float test alone does not establish that the dough is ready.
