Start with the right masa

Choose masa harina intended for making masa and follow the tamale formula on the package you purchase. Ordinary cornmeal is not a direct replacement. Fresh prepared masa and dry masa harina require different handling; do not substitute them cup for cup.

Record the brand and quantities when you find a dough you like. Begin with a small trial batch before scaling up.

An even layer starts with prepared masa

The tamale guide board helps with masa distribution and thickness; it does not replace a well-prepared dough. Follow your masa formula, then test one husk with the template before spreading the whole batch. Aim for a smooth, even layer rather than thick patches or gaps.

Wrapper preparation

Rinse corn husks and soak until flexible. Drain before assembly. Choose intact husks for wrapping and set torn pieces aside.

Filling consistency

Aim for a filling that stays in a spoonful rather than leaving a puddle. Start with a modest portion and fold one sample before assembling the whole batch.

Basic Savory Masa

Ingredients

  • 3 cups masa harina
  • 1⅓ cups softened lard
  • 2 cups warm broth when using tamale masa harina, or 2½ cups when using regular masa harina
  • 1 teaspoon baking powder
  • Salt to suit your broth

Instructions

  1. Beat the lard until light and fluffy.
  2. Mix the masa harina and baking powder in a separate bowl.
  3. Add the flour mixture to the lard in batches, alternating with the warm broth.
  4. Beat until smooth and soft enough to spread easily on a corn husk.
  5. If the dough is stiff or cracks when spread, mix in additional broth one tablespoon at a time.
  6. Let stand for 10–15 minutes before spreading, filling, and wrapping.

Savory Masa Without Lard

Ingredients

  • 4⅛ cups regular masa harina
  • 2⅝ teaspoons fine salt, reduced if your broth is salty
  • 1½ teaspoons baking powder
  • ⅞ cup neutral oil, such as canola or avocado oil
  • 3½ cups warm broth, plus more as needed

Instructions

  1. Stir together the masa harina, salt, and baking powder.
  2. Mix in the oil until evenly distributed throughout the flour.
  3. Gradually add the broth and mix for 3–5 minutes.
  4. The finished dough should be soft and spreadable, similar to thick hummus.
  5. Add a little more broth if it feels dry, or a small amount of masa harina if it is runny.
  6. Spread onto softened corn husks, add your filling, and wrap.
  7. Use vegetable broth for a completely plant-based dough.

Basic Sweet Masa

Ingredients

  • 1½ cups masa harina
  • ½ cup unsalted butter, softened
  • 6 tablespoons sugar
  • ¼ teaspoon baking powder
  • 1½ cups warm water, added gradually

Instructions

  1. Beat the butter and sugar together until creamy.
  2. In another bowl, stir together the masa harina and baking powder.
  3. Gradually mix the warm water into the flour.
  4. Add the butter mixture and beat until the dough is smooth, fluffy, and very soft.
  5. Spread onto softened corn husks. Leave plain or add your dessert filling, then wrap.
  6. Steam for approximately 60–75 minutes, keeping water below the steamer rack and replenishing it as needed.
